Kale Crunch Avocado Caesar with Torn Garlic Croutons 

Umami rich caesar dressing, creamy cool avocado, fresh crunchy lettuce, and kale come together in a snap! And those homemade garlic croutons? Trust us, they’re worth turning the oven on for. Add your favorite protein for a satisfying lunch (you’ll feel like you’re eating at a posh cafe).

  • Made with 4.5 oz Plenty Kale Crunch 
  • Serves 4

Ingredients for Dressing:

  • ½ cup of olive oil
  • ¼ cup of red wine vinegar
  • Juice from one lemon
  • 1.5 Tbsp of Dijon mustard
  • 1.5 Tbsp of Worcestershire
  • 1-2 cloves of garlic, minced
  • Salt and pepper
  • 2 Tbsp of grated Parmesan (optional) 

Ingredients for Croutons:

  • 1 loaf of French or Italian bread
  • 1-2 cloves of garlic, minced
  • 2 Tbsp of olive oil

Ingredients for Salad: 

  • ½ package of Plenty Kale Crunch
  • 1 avocado, cubed
  • ¼ cup of shaved Parmesan cheese

Directions: 

Croutons:  

  1. Preheat the oven to 375.
  2. Tear the French or Italian loaf into small, bite-sized pieces.
  3. In a small bowl, mix olive oil. Garlic, and salt & pepper to taste.
  4. Add the torn pieces of bread and coat.
  5. Spread across the baking sheet and bake for 6-8 min until golden brown.

Salad:

  1. Layer salad ingredients in a large bowl.
  2. Mix all dressing ingredients in a food processor or blender.
  3. Add the dressing and croutons to the salad, toss and serve.
