Ingredients for Dressing:
- ½ cup of olive oil
- ¼ cup of red wine vinegar
- Juice from one lemon
- 1.5 Tbsp of Dijon mustard
- 1.5 Tbsp of Worcestershire
- 1-2 cloves of garlic, minced
- Salt and pepper
- 2 Tbsp of grated Parmesan (optional)
Ingredients for Croutons:
- 1 loaf of French or Italian bread
- 1-2 cloves of garlic, minced
- 2 Tbsp of olive oil
Ingredients for Salad:
- ½ package of Plenty Kale Crunch
- 1 avocado, cubed
- ¼ cup of shaved Parmesan cheese
Directions:
Croutons:
- Preheat the oven to 375.
- Tear the French or Italian loaf into small, bite-sized pieces.
- In a small bowl, mix olive oil. Garlic, and salt & pepper to taste.
- Add the torn pieces of bread and coat.
- Spread across the baking sheet and bake for 6-8 min until golden brown.
Salad:
- Layer salad ingredients in a large bowl.
- Mix all dressing ingredients in a food processor or blender.
- Add the dressing and croutons to the salad, toss and serve.
