Matcha Milkshake with Baby Kale

Makes 1 serving

Shopping List

1/2 Cup Raw Cashew Pieces
Boiling Water, to Cover
1 Cup Baby Kale, Firmly Packed
1/2 Cup Cold Water
1 Teaspoon Matcha
1 Teaspoon Vanilla Extract
1/4 Teaspoon Liquid Stevia
1/8 Teaspoon Salt
8 Ice Cubes

Preparation

  1. Bring the water (at least 1 cup, but the exact measurement isn’t critical) to a boil in a small saucepan over high heat and drop in the cashews. Cook at a rapid boil until the nuts are soften; about 5 minutes. Drain and plunge into ice-cold water. Drain thoroughly once more.
  2. Transfer the nuts to your blender and puree, along with the kale, cold water, and matcha on high speed for 3 minutes until smooth. Pause to scrape down the sides of the canister with your spatula as needed. Add in the vanilla, stevia, salt, and ice. Blend again until the mixture is completely creamy and silky-smooth.
  3. Serve immediately in a tall glass and, ideally, with a wide straw.
