BLT Avocado Toast with Crispy Lettuce

Makes 4 servings

Shopping List

Mushroom Bacon:
3 Tablespoons Soy Sauce
1 Tablespoon Liquid Smoke
1 Tablespoon Maple Syrup
1 Tablespoon Olive Oil
1/8 Teaspoon Ground Black Pepper
1 Large (3.5 Ounces) Portobello Mushroom, Very Thinly Sliced (About 2mm Thick)

To Assemble:
2 Ripe Avocados, Halved and Pitted
2 Scallions, Thinly Sliced
2 Tablespoons Lemon Juice
1/4 Teaspoon Ground Black Pepper
1/4 Teaspoon Salt
4 Slices Multigrain or Whole Wheat Bread
1 – 1 1/2 Cups Crispy Lettuce
1 – 2 Heirloom Tomatoes, cut into 1/2-inch-thick slices
Coarse or Flaky Sea Salt (Optional)


  1. To make the bacon, begin by preheating your oven to 300 degrees and set aside a 9 x 13-inch baking pan.
  2. Stir together the soy sauce, liquid smoke, maple syrup, oil, and pepper in a large mixing bowl. Toss the mushrooms in and stir gently with a wide spatula, being careful not to break them into pieces, coating each strip thoroughly.
  3. Pour everything, including any excess marinade, into your waiting pan. Spread out the mushrooms into as even a layer as possible. Bake for about 28 – 32 minutes, carefully flipping and stirring every 10 minutes or so to keep the entire batch cooking evenly.
  4. Cook until the mushrooms are dry to the touch and highly aromatic. Straight out of the oven, the mushrooms will still be slightly soft to the touch but will crisp up nicely once cool.
  5. Let cool completely. Stored at room temperature in an airtight container, the bacon will keep for up to two weeks.
  6. To assemble the avocado toast, scoop out the avocados into a small bowl. Add the scallions, lemon juice, pepper, and salt, mashing with a fork until the mixture is well blended but still chunky.
  7. Meanwhile, toast the bread until golden brown all over. Top each piece with about ¼ of the mashed avocado, spreading it out thickly. Cover with a layer of crispy lettuce, followed by the sliced tomatoes, and finally a few strips of mushroom bacon. Finish with a light sprinkle of coarse or flaky salt, if desired. Serve immediately.
